Bubbly Baked Porridge

Ingredients:

  • 135g porridge oats

  • 75g chopped hazelnuts (or a nut of your choice)

  • 75g roughly chopped dates (or chocolate chips if you feel cheeky)

  • 1tsp vanilla extract

  • 1/2tsp ground cinnamon

  • 3tbls brown sugar

  • 650ml milk

  • 200ml double cream

  • My husband has a big Irish family, so you can also add 60ml whisky if you would like to be extra warmed and indulged.


Method:


  • Preheat oven to 160℃ fan forced

  • Scatter oats, nuts, dates, vanilla, cinnamon, one tablespoon of brown sugar and a pinch of salt into a baking dish and toss to combine.

  • Add milk and cream (and whisky if you choose) and bake for 45 minutes.

  • Remove from heat and add the remaining brown sugar and bake for another 15 minutes.

  • Enjoy with a strong coffee and some stimulating company.
